Hygiene Manager – Canopy by Hilton Cape Town Longkloof

About the Role
The Hygiene Manager oversees sanitation and hygiene standards across the hotel to ensure that all food served to guests and employees is free from microbiological, chemical, and physical contamination. This role ensures that all work areas consistently meet required hygiene and sanitation standards.
Key Responsibilities
- Maintain and upgrade hygiene standards in all work areas, stores, receiving, and disposal areas.
- Keep detailed records of the hotel’s sanitation and hygiene activities.
- Develop and maintain an up-to-date methodology manual for staff reference.
- Coordinate effective communication and training on hygiene practices with hotel staff.
- Keep office and section areas clean, organized, and efficient.
- Conduct and chair the FSS Monthly Meeting.
- Monitor and perform all protocols to maintain excellent sanitation standards.
- Participate in the hotel’s Sanitation Team to perform monthly inspections and generate reports.
- Liaise with external agencies such as laboratories, government bodies, and health practitioners on sanitary matters.
Requirements
- 2–3 years’ experience as a Hygiene Officer in a hotel or large restaurant environment; hotel experience preferred.
- Self-starter capable of managing multiple projects under pressure.
- Excellent communication, guest relations, and problem-solving skills.
- Strong leadership and team-building abilities; able to motivate and develop team members.
- Bachelor’s degree in Food Science or qualification in Kitchen Production, Butchery, and Management.
- Certifications: GMP, HACCP, ISO 22000, ISO 9001, OHSAS 18001, ISO 14001, Train the Trainers.
- Knowledge of current culinary trends, kitchen hygiene practices, and occupational health and safety standards.
- Good personal grooming, presentation, and interpersonal skills.
- Ability to adapt to changing environments and respect local culture.
- Physical ability to stand, bend, stoop, and lift up to 25 lbs.
