Job Summary
We’re looking for an enthusiastic and dedicated individual to join our team as a Manager in Training. In this role, you will be responsible for managing all aspects of hygiene and safety within the Butchery Department. Your duties will also include overseeing the production process and stock management to maximize gross margins and profits, while ensuring that all operational standards are maintained.
Minimum Requirements
- Matric (Grade 12).
- Previous experience in a Butchery or Fish department.
- Successful completion of the relevant Introduction to Retail Supervision blue file.

- Proven administrative abilities.
- Able to work in cold and wet conditions (exposure to freezers).
Key Responsibilities
- Manage employees to ensure the Butchery Department runs effectively.
- Control wastage, shrinkage, and damages.
- Provide ongoing training and development for employees.
- Control and take action on budgets (expenses, turnover, growth).
- Plan and implement sales promotions.
- Order and control stock levels.
- Prepare fresh meat and fish lines.
- Maintain high standards of hygiene, housekeeping, and safety.
- Plan daily and weekly production of products.
- Operate all Butchery Equipment, including the Band saw.
- Control, merchandise, and promote stock according to established procedures.
- Prepare and break various meat carcasses to laid-down specifications.
- De-bone all cuts of meat and manufacture mince, sausage, and Boerewors.
- Check temperatures and monitor/maintain the cold chain.
- Provide required products or services and handle customers in a courteous and professional manner.
- Maintain a high level of cleanliness and hygiene for all butchery-related equipment and utensils.
- Assist with the receiving of meat from suppliers.
- Operate Butchery Equipment such as the Wrapping Machine, Vacuum Machine, Scale Equipment, Mincing Machine, and Boerewors Filler.
- Prepare boneless meat cuts, including steak and goulash.
